Try This!

I have long felt badly about my Low-Carb Smoothies book. Why? Because the recipes rely heavily on Carb Countdown carb-reduced milk, which has since become unavailable in much of the country. (If you live near Hood dairy, on the East coast, you may be able to find it under the name Calorie Countdown. Same stuff.)

But just this weekend I tried a new way of making a smoothie -- after all, summer is here, and a cool and yummy smoothie sounds like a perfect breakfast -- and it worked out better than I dreamed. What did I use? Cottage cheese.

No, really. Cottage cheese. And I got a delicious smoothie with a creamy texture to die for. Here's the recipe:

Mocha Latte Smoothie

3/4 cup cottage cheese
1/4 cup water
1/4 cup sugar-free chocolate coffee flavoring syrup (like DaVinci or Torani)
1 teaspoon instant coffee crystals (regular or decaf, your choice)
1 teaspoon vanilla extract
2 ice cubes

Combine everything but the ice cubes in your blender, and run till it's smooth and frothy. Add the ice cubes, and keep running till you can't hear the ice anymore. Pour into a tall glass and enjoy.

1 serving with: 169 Calories; 3g Fat ; 23g Protein; 8g Carbohydrate; 0g Dietary Fiber, 8 grams usable carb.

This is such a huge success that I'm going to start reworking my whole smoothie recipe collection. Expect more recipes before the end of the summer.

I would definitely try this recipe. Especially i am more interested in the protein 23g of protein. that's really enough to replace my one meal out of my daily five to six meals without being full.

I've been using Fage yogurt watered down to make tangy milk. great for any smoothie. add vanilla extract or SF syrup if needed. love all the SF DaVinci syrups!!!

Carb count in milk?

Hi Dana,

I thought I read something you wrote about carb count in milk and how it's not actually as high as the label says because of the content of lactose. I was under the impression that 1 cup of milk actually contains 4g of usable carbs instead of 12g. Is that correct?

If so, then how would you calculate the actual carb count in whole milk plain yogurt?

Carbs in Milk

No, that's yogurt that's only four grams or so per cup -- a little more or less depending on how long it incubates. Milk really does have 12 grams per cup, but lactose is easier on blood sugar than sucrose or glucose, and doesn't jack up triglycerides like fructose.

Hood Calorie Countdown

Dana, I have seen the Calorie Countdown here in Reno as well as in Las Vegas and different parts of California. When I am out of it, I sometimes substitute a mix of half and half and water with some DaVinci syrup for flavoring.

I miss your smoothie book too!

Hood

I'm only able to buy the fat free version which I find too watery. I've been using low fat half and half in my coffee and to cook with. Its one carb per ounce and 25 calories.

Has any one tried the Greek yogurts which are lower in carbs then the regular product? I found one that is also 1 carb per ounce. Would make a good lassi - Indian smoothie.

almond milk

Since carb/calorie countdown disappeared from our stores, I've been using unsweetened Almond Breeze almond milk. It's only 40 calories/ 2carbs, 1 being fiber in an 8oz serving. (only 1 gm of protein though) I add a pack of sweetner to it. I often add a small scoop of low-carb ice cream for texture because the almond milk is pretty watery.

Smoothies

I've been using plain yogurt as the basis for my smoothies for about a year. It's not like I have them every day, but my daughter and I make a batch from time to time and we just add whatever fruit we find on sale (preferably berries), some vanilla and a little orange juice and ice. As a once in a while treat, it's great! And I don't even count the carbs...the original recipe came from a diabetic cookbook, of all places! I'll have to substiture the cottage cheese, which I like better anyway!

Carb Countdown has recently become available again at my local grocery (in So.Cal.)
LOVE the cottage cheese idea, though. I was lost without my low-carb milk for the longest time when it was off the shelves.... now I have a great fallback! Thanks!

Yes, I forgot to mention we get Calorie Countdown in all the Publix Markets here in Central Florida-again. It was gone for a long time, now it is back.

About using heavy cream in smoothies. I just dilute it with chilled water, add the protein powder and whatever flavoring stuff I am using, then whirl away. Then add ice and whirl some more. Never had it churn yet.

I bought cottage cheese yesterday, and am going to try it today.

I've got no problem with either ingredient, though I'd worry that cream might churn itself into butter...

I use cream in smoothies, so

I use cream in smoothies, so does Dr. Mike Eades. It works out fairly well. Worst-case scenario, it kind of becomes whipped. I have actually made butter with heavy cream, as an experiment, and what worked was throwing a marble into the container and shaking it that way--just shaking up cream by itself does nothing but fluff it.

I bet you could do part cottage cheese and part cream if you were so inclined.

Blender suggestions?

Dana and readers:
I've been making protein shakes and want to try this newest recipe but my blender doesn't do a very good job in attacking the ice. Any suggestions without breaking the bank? Nothing ruins the "aesthetics" of a good smoothie or shake more than hunks of ice.

Slacker Blender

Two possibilities: Shop the Goodwill for a better blender (that's where I got my current blender.) Or crack the ice before you put it in -- wrap it in a clean dishtowel and smack it with a hammer.
